Ethiopian Cuisine Glossary

  • Injera - a flat, sourdough pankake made of the indigenous Ethiopian grain called teef, it is an Ethiopian staple.
  • Mitmita - ground chili pepper
  • Berbere - ground red pepper
  • Awaze - mild bebere sauce
  • Wat - a thick stew, served atop Injera
